    SANSHORAKU Sake Brewery

    Discover Sanshoraku: Japan's Most Remote Sake Brewery in a Deep Mountain Area

    The name Sanshoraku comes from the Noh play Sansho, which is based on an ancient Chinese tale. It symbolizes the joy of drinking with friends, laughter, and shared happiness. Nestled in the heart of the mountains, Sanshoraku Sake Brewery is proud to be known as “Japan’s most remote sake brewery.” Located in Gokayama, one of Japan's heaviest snowfall regions, the brewery is surrounded by breathtaking natural beauty and cultural heritage.

    Behind the brewery lies a vast virgin beech forest, cherished by locals for its role as a natural dam. These beech trees store large amounts of melting snow, which nurtures the soft spring water essential for brewing Sanshoraku’s exceptional sake. The forest also protects the village from avalanches, showcasing the harmonious relationship between people and nature.

    Gokayama is also famous for its Gassho-style houses, a World Heritage Site since 1995. These unique structures, with their steep thatched roofs, reflect the history and resilience of the region. Visitors can also enjoy the area's specialty cuisine, including traditional dishes like game meat, which preserve the customs of this remote mountain community.

    Sanshoraku’s sake is distinguished by the rich umami of carefully selected rice and its refreshing acidity. It pairs beautifully with bold-flavored dishes, enhancing their flavors and cleansing the palate for the next bite.

    IKETOME SELECTIONS : Sanshouraku Promotion Video

    Sanshoraku boasts a history spanning nearly 150 years, with most of its sake being consumed within Toyama Prefecture.

    This means that what has nurtured Sanshoraku over the years is undoubtedly the various elements surrounding the brewery—namely, the local people and the unique climate and natural features of the region.

    We have created a 10-minute video that introduces the sake brewing process at Sanshoraku, its flavors and aromas, as well as the remarkable natural environment, cultural background of Toyama Prefecture, and insights from the brewery’s master brewer.

    KIKUSUI Sake Brewery

    At KIKUSUI, items are ideally aged in a dark tunnel where light cannot reach, and the temperature remains at a constant 11 degrees Celsius throughout the year.

    KIKUSUI sake brewery is temporarily closed and will reopen this coming May. During this time, they will focus on selling their existing stock until the next brewing season. New sake production is planned to begin in autumn, with the release of new products scheduled for 2026.

    MYOKO Sake Brewery

    A Toji (master brewer) of MYOKO sake brewery, MASAYUKI HIRATA from the local Kubiki region and the first in Niigata to be certified as both a 'Niigata Master of Craft' and an 'All Japan Meister.' After passing the national examination to become a First-Class Technician, he became the Toji at Myoko Shuzo at the young age of 38 and has since led the brewery to numerous awards.

    ENOKI Sake Brewery

    Enoki Sake Brewery is located on a small island in the Seto Inland Sea. It is the first brewery in Japan to produce Kijoshu "貴醸酒", a unique type of sake.

    KUROSAWAI Sake Brewery

    All rice used in production is sourced from Nagano Prefecture. In particular, the brewery has established contract farming with young, motivated farmers within a 35-kilometer radius of the brewery, while 5% of the rice used is cultivated on the brewery's own farm. This reflects their philosophy of "No Sake, No Life (農・酒・呑・生活)," which emphasizes deep ties to agriculture and local traditions. All rice polishing is done in-house to maintain strict quality control.

    To create a sake you can enjoy endlessly, without ever losing interest, we are dedicated to the traditional Kimoto brewing method. This approach prioritizes not only rice polishing but also enhancing the flavor and texture of the sake. We are in pursuit of a sake that is delightful, with a rich and slightly dry profile, and a well-balanced harmony of the five essential sake tastes: sweetness, acidity, spiciness, bitterness, and astringency. This dedication results in a sake with depth, balance, and an exceptional drinking experience.

    TOA Sake Brewery

    HANYU DISTILLERY

    Toa Shuzo’s whisky business began in 1946 when our company acquired a whiskey manufacturing license. At first, our company blended and stored casks of malt whisky imported from Scotland. In 1980, the company built our own pot still and began to experiment with the production of malt whisky.

    Due to a decline in the whisky market, Hanyu Distillery ceased operations in 2000 and whisky production stopped in 2004.

    But in our hearts, we believed one day we will make whisky again. As we stabilized our business, we once again took up the challenge of making whisky. After resuming operation of our distillery, we wanted to revive the former Hanyu Distillery in every way. Fortunately, the original employees who ran the distillery last time were still with us.

    In November 2020, the completed still was brought in and a test run was conducted. In February 2021, finely ground malt was put into the mash tun with hot water, and the long, long whiskey-making journey began.

    Under the watchful eye of our master distillers, distillation in the first pot still began, and after 20 years, the long-awaited distillate began to pour out. We also are storing barrels in their original location, as we continue to strive to recreate the original taste of Golden Horse.

    USAGIDA Winery

    – Winery Introduction –


    We are Chichibu Farmers Factory Co., Ltd., the operator of Usada Winery located in Chichibu City, Saitama Prefecture. Situated approximately 40 minutes from the Kan-Etsu Expressway Hanazono Interchange via National Route 140, our winery proudly produces wines under the motto:
    "Born and Raised in Chichibu – Usada Wine."

    Our company president, who has been running a liquor store for over 30 years, had a long-standing desire to make wine using locally grown grapes from Chichibu. In collaboration with local grape farmers, we began producing wine from Chichibu grapes through contract winemaking while continuing to operate the liquor store.

    We started submitting our wines to domestic wine competitions, and since around 2008, we’ve had the honor of receiving awards annually. With generous support from various sectors, we began cultivating our own vineyard in 2013 and launched in-house wine production in 2015. Since then, we have been committed to revitalizing the local community through agriculture and winemaking, while also promoting the effective use of farmland in Chichibu.

    Today, we produce wines using grapes from our own 2-hectare vineyard as well as grapes grown by farmers in Chichibu. We also age some of our wines in barrels previously used for maturing whisky from a nearby whisky distillery, and create mixed fruit wines using domestically grown fruits.
